Hospitality, to me, has never been about putting on a show.

It’s about feeding people. Really feeding them.

It’s knowing that someone drove an hour to get here, that someone’s celebrating something they’ll remember for the rest of their lives, that someone at the table has never tasted half the things we’re putting in front of them.

It’s giving a s**t.

It’s the cook sweating over a hot stove. The server carrying six plates at once. The farmer who grew the vegetables. The person washing dishes long after everyone else has gone home.

It’s knowing when to talk, when to shut up, when to pour another drink, and when someone just needs to sit down and enjoy their meal.

I believe food should have a sense of place. It should tell you something about where you are, who made it, and why the hell you’re eating it in the first place.

And hospitality shouldn’t feel sterile or rehearsed. It should have some scars on it. Some personality. Maybe a little chaos.

Because we’re not just serving dinner.

We’re giving people a few hours of their lives.

And if we do it right, they’ll leave a little happier, a little fuller, and hopefully with a story worth telling.
