Good evening folks. We unfortunately have some things to address. Please take time to read entirely.
We aren’t even sure how to put it into words but we will try. In December 2021 we first opened under the name The Jackson Grill at the old White Flash 2 building. We quickly outgrew that space & found ourselves at Campbell Circle where the Kountry Kitchen was officially born in August of 2022. We even added a pet store in the mix in August of 2023. We were at our peak when a devastating fire took our building from us in January 2024 which ultimately lead to us selling the pet store so the restaurant could survive. Since then we bounced back to land on Main St trying our best to serve Jackson & Breathitt Co.
Since coming back we have been faced with struggle after struggle trying to make it work. Between the rising cost of food, insurance, & especially the utilities in this area it has taken its toll on us. We have had other buildings in our view sights to go back into but unfortunately they keep falling through for various reasons. We have done everything we could here but ultimately we can’t continue to sustain our cost vs location. Given we have 2 girls who depend on us, we must always put them 1st so we must make some changes in our lives.
Several of you may have heard already but we are closing our doors for good here in Jackson & we will be relocating to Glasgow, KY in the near future. We planned on our final day being next Friday the 14th but again life has thrown another curve ball. Today we have learned that our waitress Ashley has found another job & we are thankful she did. Earl is still needing a job if anyone would love to hire him. You won’t be disappointed with him. They are one of the biggest reasons we have stayed this long. We sure can’t thank them enough for all that they have done for us to try to make what we do a success. We also were hit with the stomach bug now so that has prevented us from opening the rest of this week. Now we are uncertain if we will be able to open again at all but we would love to have a final day to say goodbye to everyone. If so we will of course post that.
Speaking of our staff, let’s talk about Ashley & Earl for a minute here. These two have been a blessing to our lives. Ashley & Beckham were the first ones that came to us to make sure we had money to eat when we lost everything we ever worked for. Earl, Christina, Debbie & their family teamed up to raise money so we could afford to come back. If it wasn’t for them we wouldn’t have been able to. We have tried to support them & cheer them on anyway that we could. Just because The Lord is taking us on different roads, doesn’t mean we stop cheering for them. Doesn’t mean we have to lose that relationship that made us feel more family than co workers. We have laughed, cried, sweat, bled, prayed, & even went on vacation together. No one will ever replace them & whoever ends up with them on their team will surely be lucky to have them.
We have tried our very best from the beginning to now to provide you with a clean & family friendly dining experience along with the best food we could possibly cook. We have worked ourselves to death so we could continue to serve people. We have donated when & where we could to help as many people as we could. So many more need help. Please never stop helping anyone in need. This world needs to be shown that Love & Compassion still exist. We have loved every single second of serving the great people of Breathitt Co & surrounding counties.
So to everyone who has ever walked into our building whether to eat or work, from the bottom of our hearts we thank you! Thank you for the memories, the trust, the love, the support, & most importantly the friendship. We truly believe that The Lord will always put us where he wants us & whether we understand it or not we must trust him in everything we do. Our hearts are broken but we know he has a plan. We apologize for being so soon but we do hope everyone understands & we hope to see everyone soon. We LOVE all of you!
