To the World,

I want to get one thing completely straight right from the very jump: this isn’t about subscribers for me. I am not doing this for likes, views, or clout. This is about me leaving proof behind that I existed. It is about showing you that there was a real human being standing behind those swinging doors in that kitchen for all those years. For decades, I was the guy you never saw, executing the line in the background. This right here is my moment of finally pushing past those doors and finally **walking out into the dining room**.
And look, before the skeptics start jumping in saying, *"Oh, he's just using this technology to make money"*—let me stop you right there. **Absolutely, I am.** This is my new job. This is how I intend to survive and build a future. But here's the beauty of it: I’m not just trying to build a business for myself; I’m trying to help other people learn this exact same path *while* I am learning it. This AI and technology shift is so new and so wild that nobody really knows what the hell is going on yet. That’s the adventure of it. It’s actually kind of fun. So instead of standing on opposite sides, let’s dive into the weeds and figure this thing out together.

Before I say anything else, I need to put this out there: I may not always say things in a politically correct way. I don't even know how to talk correctly by corporate standards yet, but my heart is entirely in the right place. I am learning how to communicate in this new world outside the kitchen, and all I ask from you is a little bit of grace while I figure it out.

But let’s be real about something—while I'm still learning their corporate language, I already understand something their corporate language will never, ever understand: **the culture of the kitchen.** Corporate suits can write all the manuals they want, but they don't know what it means to look at a line and communicate entirely through pure, silent movement. In the kitchen, you don't communicate with long, drawn-out paragraphs. It’s a language of momentum. It’s knowing that when a ticket goes up, **"the ticket rail is sacred."** You communicate by looking for hand signals. You look for something as simple as a temperature pick in a steak, or the exact way a ticket is put up on the rail, or how the expo guy has his window set up prepping for the runners and the servers. It's details. It's always details that we see.
I know by college standards I might not be what you consider smart, but I made it this long without asking for handouts. And I want to be completely transparent with you: AI helped me write this letter. I spent three hours conversing in a single thread to bring this to life. This technology took the raw truth directly out of my heart and translated it into the words I am speaking to you now. I am learning how to communicate in this new world, and this tool is helping me bridge that gap. This is what my mission is about: using technology for good, to organize the chaos and anchor a massive vision.
When I look at my path, the very first thing I have to acknowledge is the absolute blessing of all of it. Everything I have going on in my life—with the recent knowledge that I may be ADD, combined with always knowing I was as dyslexic as they come—everything has finally clicked. I want to make sure people know this: **this wiring is exactly why I have been successful in this business.** This is why I've always tried to leave every kitchen better than I found it. This is what has made me an expert in this field, and I don't want anyone to confuse it.

This concept is not about rewriting recipes or telling chefs how to garnish plates. I don't care if the rest of the world has stopped caring—**I still count in pennies.** I'm not concerned with *what* you're selling. I've been doing this so long that it does not matter to me if your board is hot dogs, gazpacho, Italian, Mexican, Greek, or Puerto Rican food. I don't care. This is about the math. It is 100% about the numbers. Now, you absolutely shouldn't sell things that don't work or don't sell—but we'll get there. I am going to show you exactly how to get that data and use it to ensure real money is being made.
Think about what this technology can do for us right now. It can track weather patterns in real time. It can tell you if there’s a major traffic accident a mile down the road and traffic is suddenly being redirected right onto your street. It lets you know *in real time* so you can instantly prepare the line for a sudden rush. It can track a concert down the road, a soccer game, a local festival, or a parade, and give you the data to adjust your prep accordingly. You can write hyper-targeted menus using seasonal vegetables in a matter of seconds. Don't get me wrong—you still need to know that the recipe works, and as chefs, we are always going to tweak the flavor. But what I like is the system of the recipe itself. How is it written? Is it well thought out? Is it built for maximum efficiency? These are all things AI can do for us instantly.
This shift is happening right now, and it is not a bad thing. But I am telling you straight from the shoulder: if you are not learning this right now—if you look at this and say, *"I'm going to wait until next year"*—you will wake up 10 years behind the curve. There is no way around it. That is why it is so incredibly important to me to completely put myself out there and build this community, because **time is of the essence.** In our business, time needs to be watched as closely as a major holiday. One single wrong move, one bad estimate, can cost you massive time and money. Those are the exact bottlenecks we are going to eliminate.
Let's be completely honest: I have lived with the wrong mindset for a long time. I don't come from a soft or healthy world; I am a survivor. When you grow up in a world where you are constantly just trying to survive, you don't have the luxury of a Plan B. For most of my life, survival meant keeping my head down, playing it safe, never taking real risks, and basically just being a tool in a system. But staying comfortable is no longer an option. I am stepping out of the kitchen and into a completely new world of technology that I don't know anything about, and quite frankly, it terrifies me. I am doing it to save my life because my bones, my back, and my lungs are giving up after a lifetime on the line.
This project—this 180-day living flow—is my risk. This is my absolute, all-out try. I just need to know what I could have been. I need to know how far I can go. And if I fail, at least I will look at my reflection in the mirror and know that for once in my life, I actually stepped up and tried.
I know exactly what the critics, the skeptics, and the comfortable will say when they watch this. They will look for the catch. They will look for a hidden agenda. So let me look you in the eye and answer you before you even speak: I am doing this because I cannot be the only one.
I cannot be the only person at this exact milestone of life whose body is feeling the relentless weight of decades of hard, physical labor. There are guys out there just like me who are old, who just cannot stand for 16 hours anymore, clean up the station, and still go home. I cannot be the only one who woke up one day and realized that the physical routine that used to sustain them can no longer carry them forward, forcing them to look for a completely new way to survive. And I cannot be the only one who looks at how fast this world is changing, how fast technology is moving, and feels the sudden, heavy pressure to adapt right now or get left behind forever.

What I am doing here will work for every single industry across the board. I don't think this is going to be an overnight thing, but I absolutely understand that this is the future. I am trying to be the bridge. If we use these tools right, we give the people who work this business more time to do what they are actually passionate about. We give owners better ways to manage their money, their products, their waste, and their time so they can save that capital and put it right back where it belongs—into the business and into the pockets of the people working behind the lines.

Even if you don't work in the restaurant business, you can take these exact ideas we build here and apply them to your own life and your own field. In our world, we have a saying: **"Mise en place isn't just how you set up your station; it's how you set up your life."** It means everything in its place. If we play our cards right, and if we come together as a community, we can use this operational blueprint to tackle the biggest bottlenecks on the planet. Maybe, just maybe, if we stand together as a team, we can actually figure out a way to solve world hunger and fix it once and for all. It takes a team to figure this world out; this is just my tiny piece of the puzzle. I am sharing my story so that someone else out there doesn't have to feel so entirely all alone.

I'm putting everything I have out there on the line, and I'm just asking for a little help to get the word out. Give me a little thumbs up, a shout-out, a share—whatever it is you do on these platforms to show support. I am trying to pull the team together and build a true community of people who realize that even if you don't *want* to use this technology in your day-to-day, you at the very least need to know how it works.

As chefs, our entire jobs are about looking for problems, hunting down bottlenecks, and figuring out instant solutions to give the guest the best experience possible. We are deeply passionate about this. And cooks like me? We don't know how to quit. In a kitchen, when the rush hits and you’re deep in the weeds, you don’t panic. You look at the guy next to you and you say, **"Push through, I'm right here with you on wheel. We don't drop the line."** We don’t walk away when it gets hot, and we don't drop our aprons just because we're tired. We finish the fu***ng job as a team, we clean down the station, and *then* we go home. That is the vibe. That is who we are.

From this second forward, the bridge behind me is burned. For the next 180 days, overthinking is dead. If what I am doing in an exact second does not work, I am not going to stall or analyze it to death; I am dropping it and moving directly to the next solution. I refuse to get held up in the problem. I am going to focus my eyes and my mind exclusively on what is working, capturing every single win, no matter how small. I am going to flood my consciousness with words of power, strategy, and momentum, locking out the noise and negativity of the world.

I am engineering my food intake with pure culinary precision to act as clean fuel for my body and mind. I am keeping my home and my workspace immaculate, stripping my office down to a minimalist Mecca of business and inspiration under the banner of *A Chef Looks at 50*. I am using my technological ecosystem to maintain flawless daily visibility over every single dollar and asset. I am going to document this exact journey, my real-world insights, and my systems through videos and media without an ounce of fear. I am going to speak with raw authority, learn in public, and put my authentic perspective into the world.

And on this journey, I am pulling strength from my wife, Rachel. I am not asking her to be a cheerleader or to carry my heavy lifting. I own this weight entirely. She is simply the steady anchor who lifts my spirits and keeps pointing out the beautiful parts of the life we are actively constructing. She keeps the light burning, and I carry the fire forward.

I have established three unbendable laws for the next six months:

First, **Maximum Immediate Effort**. No matter what task is in front of me—whether it is cleaning a room, formatting a business plan, tracking a bill, or recording a video—I will execute it to the absolute maximum of my ability. In our world, **"if you've got time to lean, you've got time to clean."** There are no half-measures. If a path blocks, I pivot to the next solution immediately.

Second, **Radical Honesty and Resilience**. If I stumble, slip, or fail on a given day, I will not hide from it, make excuses, or use it as a reason to spiral. I will step into the light, radically admit my failure to myself and my community, extract the lesson, and keep moving forward. Like we say when a dish gets sent back: **"Fire it again, make it perfect, and keep the line moving."

Third, **No Retreat, No Quitting**. I cannot quit. I will not quit. Exhaustion is just a data point, not a reason to stop. For 180 days, I am a nonstop machine of intentional trial, documentation, and growth. At the end of this six-month crucible, I will reevaluate my entire life from a position of absolute power. If the world has not moved after six months of flawless, maximum daily effort, I will walk back into the kitchen line with my head held high. But until that 180th day is complete, I am all in.

I hear these words, I own these words, and I command my mind to live them from the second my eyes open to the second they close. I promise myself, by the blood in my veins and the breath in my lungs, that I will focus exclusively on solutions, execute every task to the best of my ability, speak my truth without fear, and never quit on my own future.

My past is owned. My mistakes are mine. My future begins right now.

Behind! Clearing the line. I am all in.

Spent the last 30 years mastering the kitchen, and now I am learning how to let AI handle the rest. Yes, I am 48 years old. No, I have no idea what half the slang these kids use today means. But I do know how to run a kitchen, and I am figuring out how to use this technology to automate a restaurant business.
If a lifelong chef who is used to fire and steel can step off the line and learn how to use AI to scale an operation, you have absolutely no excuses. To all the owners and managers out there, let's figure this out together.

I officially let Al take over my life today. Within ten minutes, I accidentally locked myself out of my own email, my smart fridge started speaking German, and I'm pretty sure my toaster is plotting a coup. I have absolutely no idea what I'm doing, but hey...
at least I have proof.
