Thankyou so much to everyone that supported the collab with last night. This photo means a lot to me especially; without Erik’s influence I would have never attempted to learn about making noodles or be a halfway decent chef - Rooney’s inspiration and constant encouragement has given me the motivation to keep trying when times are tough. I have an enormous amount of respect for both of you 🙏

Thank you all for being here, I’m ready to step things up!

Tough post incoming: it’s the last day at the shop for and because of tough life circumstances and timing I can’t be there to see him off. Thinking back over the last five years we have worked together - there are plenty of times I would have thrown this whole dream away if he wasn’t involved. He has always put forth more than 100% even when I couldn’t - The amount of appreciation, love and respect I have for you can’t be put into words, dude. I couldn’t have hoped for a better sous chef - nothing but the best of wishes for you and Celeste on the next journey ❤️❤️

Tomorrow marks 2 years of taking the pop-up full time 🤯 I’m thankful to say that it doesn’t look like that is changing anytime soon - me and are going to Japan in a few weeks, I’m planning on putting everything I have into the fall menu after getting back. This journey has been absolutely surreal, thanks y’all. 🍜 🍜
