My worst nightmare as a baker....ugh. Had a 3 tier cake going an hr away. Had the cakes chilled (which I don't normally do) to add stability/solidity for the drive. But roads suck and it was 92 degrees outside. Arrived to find the bottom tier had damage and the top tier had cracks.
Luckily, I am always prepared for anything. Had all my tools and extra frosting/decor. After a few tears and a minor meltdown, I was able to recover and repair. The final cake had some imperfections, but the guests could not tell. Overall, I am calling this a success for my niece's wedding.

When I say my cupcake has a cheesecake center...I mean it. Cheesecake baked inside the cake is so yummy and decadent!

Made Pumpkin Cheesecake filled cupcakes! But instead of cream cheese frosting, I made a simple brown sugar streusel to top them.
