Wally's will not open today.
Dreams, Ideas, and Wally’s Direction
Reflecting on Wally’s
When I imagined Wally’s, I had a clear vision of what it could become. I am overjoyed by the support we have received, but somewhere along the way, the business drifted from what I originally set out to build.
We have tried to remain open to suggestions. However, over the past year, we have only been able to focus on PGC Farms Steak Night a handful of times.
We have not been able to host Murder Mystery or Vinyl Nights—or many of the other specialty events we intended to offer. Still, the events we have hosted have brought visitors from near and far.
Some nights we welcome 10 people; on other nights, more than 100. Wally’s was not designed for large crowds, although we have managed them as best we can.
I have questioned whether our level of service during those rushes meets the standard I expect. After 20 years in food production, I notice issues that others may overlook or ignore. When it comes to the kitchen and food prepared for consumption, I allow little to no room for error.
Guest Conduct and Safety
We expect everyone at Wally’s to behave responsibly: be courteous, act appropriately, and remain in control of yourself. Unfortunately, we continue to face repeat offenders whose disruptions affect our business and the experience of other guests. That should not be happening.
When management must become physically involved, the pace and stress level change for everyone present. I do not like being placed in that position. I do not like the Stress from these occasions. Alcohol can bring out troubling behavior, and I did not sign up to manage that. Keep it under control or take it elsewhere—no guest or employee deserves to deal with those issues or outbursts.
This is not only about physical fighting; it also includes emotional confrontations and the risks they create. I have heard accounts from staff about customers’ actions that are deeply concerning. I will not put myself or my team in those situations.
I do not want to tell grown adults to settle down, but protecting my dream, my staff, and our guests is part of my job. When people become irrational, they can put everyone—including themselves—at risk. Wally’s was not created for that kind of behavior, and those incidents make it difficult to look forward to opening the doors.
Slowing Down and Refocusing
It is time to hit the brakes, slow down, and return to the personalized services Wally’s was meant to provide.
What We Will Continue to Offer
• Preordered meals and lunch preparation for pickup or delivery.
• Private events and parties. We will retain our license and continue offering a unique night-out option for guests who reserve the location.
• Family celebrations, including anniversaries, birthdays, baby showers, and wedding showers.
• Private group gatherings, such as girls’ nights, guys’ nights, bachelor parties, and divorce parties.
• Bed-and-breakfast-style service for our overnight guests.
Private-event guests must have an invitation for admission.
Private means private.
By slowing down and refocusing, we can protect the quality, safety, and personal experience that Wally’s was created to provide.
I will share more detailed information in the coming days as these changes take effect.
PLEASE KNOW IF YOU ARE ON OUR SCHEUDLE- NOTHING IS CHANGING FOR YOU OR YOUR EVENT!
We are simply changing our Open Door Policy for the Foreseeable future and focusing on Private Events.
In turn- this allows us to give you our Undivided attention.
Thank you
