Well well well, HAPPY NATIONAL CHEESE DAY🧀
Today we would like to shout out or amazing cheese supplier: Mariano, who owns La Mariposa 🦋
When opening in Oregon finding a high quality, hand crafted, LOCAL cheese was extremely important to us. Since trying La Mariposa’s cheese, we have never looked back and have been serving every quesadilla with their mild cheddar (yes, even the dessert dillas had a little bit in there) since October 2021.
Mariano himself has been incredible to work with and provides consistently fantastic cheese.
If you’re trying to find him, check out the Albany and Corvallis Saturday markets where he frequently sells at!

TODAY IS THE DAY: PRESTO IS BACK🌿
Fun Fact: Presto was one of our original quesadillas serving it in California during our covid 2020 pop up events and have been bringing it back seasonally ever since!
Shredded chicken, local mild cheddar cheese, house made pesto, and optional Sungold tomatoes. OOF🤤
We will not be doing our usual Tuesday dilla deal tonight to prioritize the relaunch of Presto! Open 12-8:30 here at Parallel 45!

We have good news and bad news…. Let’s start with the bad news.
Bad news: we will be closed this Thursday-Saturday due to being out of town.
The good news: When we reopen Tuesday, THE SEASONAL RETURN OF PRESTO IS UPON US!! For those who haven’t gotten to try this one yet: Presto is shredded chicken covered in our house made Pesto with optional lil baby tomatoes. It’s perfect for this sunshine and we are SO excited to have Presto make her return🌿

Jacob has been working on homemade tortillas for a few years now, getting them to his standard of perfect texture and taste (and making sure they have a high puff amount when cooked). Tuesdays are the only day of the week we currently use OUR homemade tortillas, so if that sounds to your liking- get on over here😉✨
