The birth of the restaurant started in an email, sitting in a bar after work, when Mark and I lived in NYC. Tedd, who had lived in the city for 12 years had finally moved back home to Hilo. He sent us a listing of a restaurant that was for sale, with pictures of something much larger than we had ever ever dreamed of trying to do.
So much of our story starts with Tedd, he was the one who understood the vision, who rallied, and taught, fiercely; whose presence even after the year that he was with us continues to permeate the space, in the lanterns that hang, the way we set our tables, our keenness for aesthetics and detail, in the iconic Mom’s garlic fish sauce that’s in our Crispy Brussels, it’s him.
Tedd left this world recently. It’s hard to reconcile a loss so large, but we see him, emulate him, and we’re with him every day, in the way that we do what we do, set our tables, move swiftly and efficiently across our floor, the music that plays, the importance that it holds, in the stories that we tell with the food that we serve. Rest in peace, rest in love, thank you for teaching us, and helping us learn in this big journey
