Three words come up repeatedly when sipping on Yessica Parra’s coffee: Elegant. Comforting. Memorable. Taste for yourself both the richness and balance of Yessica’s washed Papayo as we are honored and proud to roast and offer you this varietal for the very first time at Penstock 👏. Pull out a spoon and enjoy the Dulce de Leche, tres leches cake and tropical fruit medley gently lingering in your cup.

Yessica and her brother Diego Parra are fourth generation coffee growers and names that we feel you’ll be seeing much more often thanks to their unique profiling and processing at Diwan Coffee / El Mirador farm. We are so excited to share these and have you experience their craft ✨.

You may remember this very special summer coffee creation that we started 2 years ago and the 2026 version is now here!

This Colombian blend from El Rincon Farm via Equation Coffe is arguably perfect for those warm days when you need a refreshing pick-me-up or when you’re looking for a mocktail to sip on slowly on the rocks! It has a candy-like Tootsie Pop sweetness, a refreshing zing of a homemade Arnold Palmer in your favorite glass pitcher with some garnished blackberries. And it’s full of wonder, juiciness, and all the pink flamingo fun that will have you feeling like you’re floating in cool blue pool. 🏊🏻‍♂️

Whether you’re chilling by the pool or enjoying a picnic in the park, whether you prefer it as a crisp cold brew, espresso, or a pourover, Juicebox delights the senses. It’s now available to try as flash brew at our shop along with bags for purchase!

✨New Coffee Alert!✨

Clean, subtly sweetly “green”, and delicious ☕️🍏. From the brilliant farmer Fabian Acevedo, of Finca Providencia de Jeshua. Finca Providencia, a multigenerational family-run farm grew and produced a wonderful transition coffee from Spring to Summer with this Java varietal.

We are so grateful for our friends at Equation Coffee for introducing us to this offering from Fabian and look forward to you enjoying it at home or in either of our cafes while it lasts! Now available for purchase at both shops and online!

Starting this sunday, we will have homemade & organic sourdough loaves for sale! 🍞👇

Every sunday, we will have half or whole sourdough loaves available at the counter, made by our lovely bakery team! And we got two varieties- Artisan or Seeded 🤤- that will go so well with our morning coffee.

Limited Quanitities are available and ONLY ON SUNDAYS so come early to bring one home.

Another familiar old friend is back- say hello to Lo Prometido! 🍓🥝👋

Lo Prometido is a naturally processed Catuai Rojo varietal and our second of three total releases from Luis Balladarez’s farm for 2026. If that name sounds familar to you, it’s because he is the farmer behind our other offering of Un Regalo de Dios and previous releases of La Bendicion!

This coffee is sweet and juicy, with vibrant notes of strawberry, and kiwi pieces of fruit cut up and swirled into an iced cream soda. Similar to Luis’s naturals, it is clean, smooth drinking and perfect for the warm days ahead.

We are proud to share this lot, and we hope you enjoy it as we do as the weather starts to warm up!

Please give a warm welcome back to a penstock coffee classic you may recognize- Un Regalo De Dios! 👏
 You asked for it after one year of absence and we welcome you back to an old favorite from from an old friend - a honey processed bourbon varietal from Luis Balladarez’s farm, Un Regalo De Dios. If that name sounds familiar to you, it’s because he is also the farmer behind Lo Prometido and La Bendicion!  This coffee is pleasant to drink-sweet and juicy, with vibrant notes of raspberry drizzle, sensation of white chocolate, macadamia and peach. Similar to Luis’s offerings over the years, it is clean and fun.

Our newest coffee offering: Hacienda La Papaya. SIDRA 🍑☕️✨.

Hacienda La Papaya takes a turn toward the lighter, brighter, gentler side of the spectrum. Not too light. Not too bright. Refined.

Seasonally splendid in her glory; Sidra is here with character on the inside and out.

Outside of the agreed upon cupping notes for this Juan Pena natural, we found memories of peeling clementines by hand in the afternoon front-porch sun, savoring a refreshing bite of a nectarine, gentle aromatic florals, hint of rose hips complexity and overall beautifully uniform in its nuanced sweetness and pleasant body.

Springtime has arrived, and this balanced limited time offering ushers in a sensory experience fit for the days ahead. Now available online and in store.
