With all this wonderful rain, we have been smelling Fall around here! It’s definitely in the air and thankful for it!

Our featured drink for this fine Fall Weekend in historic Hico, Texas at The Midland Hotel and Chop House is a Pear Spiced Mule!Simple and to the point, but aaahhhh, so much depth.

We make our own Spiced Pear Moonshine and that’s the star of the show. Aged for at least 30 days. Then we use the absolute best pear liqueur around for that subtle,sweetest pear in the bushel flavor (Mathilde Poire)and finish it all off with our favorite ginger b**r then topped with a splash of mineral water. Perfect for the season!

Pear Spiced Mule
1oz spiced pear moonshine
1/2 oz Mathilde Poire(it’s frenchy and divine)
Top with Fever Tree Ginger B**r over ice in a copper cup and finish with a splash of mineragua. Pear and Cinnamon Stick for garnish and the perfect straw for sippin’! Cheers everybody!

So this one is in the bag……………🤣🤣🤣. Figure of speech, so to speak……🥸🥸

Our fresh fish feature on this fine Friday is Coho Salmon Papillote. Aka salmon cooked in parchment with broccolini & roasted potatoes and finished with a carrot cream sauce. This type of cooking seals in all the juices and is great for a lighter style of dining.

Coho Salmon is very different from other types. It’s delicate and light. And very mild for salmon lovers. Less fat than other types. But absolutely delicious and is one of the best for baking and meal prepping.

Get it while quantities last! You are going to want to try this! My mouth is already watering. And I was not your Guinea pig for this fine dish.

One small town claims Billy the Kid did not die in 1881. The next town down the road is where the old-fashioned Dr Pepper legend lives. Put them together and you have one of the most fun short drives in North Central Texas. 🚗

Start in Hico, in Hamilton County, where the Billy the Kid Museum tells the story of Brushy Bill Roberts, a local man who said until his death in 1950 that he was the real outlaw. Walk the old limestone downtown, with its restored storefronts, painted wall ads, and the 1896 Midland Hotel building, and stop at Wiseman House Chocolates or a local cafe for pie. 🍫

From there it is about 30 miles northwest on US 281 and Texas 6 through rolling ranch and dairy country to Dublin in Erath County. Dublin is where the Dublin Bottling Works made Dr Pepper with pure cane sugar for more than a century, and today the old plant is home to a soda fountain, tours, and a museum packed with vintage signs and bottles. Plan a relaxed half day, and add a stop at the courthouse square in Stephenville if you want to keep rolling. 🥤

Top of the morning to you all from the upstairs front patio of The Midland Hotel and Chop House! We have the best view in town!

Stop by for Lunch-Brunch service today from 11 till 3. We will be serving all your favorites! Herb Roasted Prime Rib, Red Chile Fried Chicken, Creme Brûlée French Toast(wowser) and many more available. Plus, anything from our dinner menu! But……..for your menu spotlight……..we are going with the “World Famous” Louisiana Style Shrimp-n-Grits!

This is a house favorite for any meal of your day. Sautéed Louisiana White Shrimp and house made Andouille Sausage, finished in a rich Worcestershire-Butter Sauce with a squeeze of fresh lemon and Cajun spices. We wrap this dish all up with grilled ciabatta and a sunny side yard egg for dipping and serve it over Green Chile White Cheddar Grits. Now the Star, is definitely the grits. From Homestead Gris Mill in Waco, Texas……in the Hico grit making world these grits take 45 minutes to cook. Absolutely delicious. No self respecting Texan begs for instant grits……(even though that dog will hunt when in a pinch).
