Did you know that coffee “cracks” as the gases expand, causing a popping noise like popcorn? For darker roasts, the coffee goes through two different crack cycles- the first on happens around 390°, and the second crack around 450°. Oils are released during the second crack, which is why darker coffees tend to be shiny while lighter coffees have a more matte look.

this happens to be a roast of Mexican Sicobi- our lightest roast- which is taken out not long after the first crack at 420°. It has strong sugar smells and fruity notes when poured into the cooling bin!

As we enter the holiday season, stepping into the roasting room takes on a whole new meaning. We are always so thankful for those that enjoy our coffee, but this season often brings the opportunity to share what we love with more and more people around the world! I love to think, as I am roasting , who will be sharing this moment with me in a cup of coffee, a gathering with friends, in a moment of peace before the day begins. Coffee is not just a commodity, it is an experience, a tradition, and something that should be shared. At Browne House Coffee we understand this and take responsibility for enhancing these moments by transforming the best beans into a quality memories.
