Let’s make one of the most commonly used Mother Sauces around the world in the culinary field dating back to the 19th century. This simple, quick and delicious sauce was created by French chef Auguste Escoffier, referred to as the king of chefs and the chef of kings! The taste, mouthfeel and aroma of this delicious sauce is giving acidic, silky, herbal and comforting. Now let’s get into BeyyBbyy! 👩🏾🍳
Ingredients:
1oz bacon or 1 Tbsp olive oil
2 oz onion (medium dice)
2 oz carrot (medium dice)
1 ½ qt canned crushed tomatoes
Sachet:
1 garlic clove
Pinch peppercorns
Pinch thyme leaves (dried)
Pinch rosemary leaves (dried)
Sea salt to taste
Optional: black pepper and sugar
Notes:
Sweat bacon, onions, and carrots (do not brown)
-Once the tomato sauce is complete you can pass it through a food mill, strainer or pulse with a blender.
