STREET CORN CHICKEN RICE BOWL ๐ฝ๐
A flavor-packed bowl inspired by Mexican street corn (elote), combined with seasoned chicken and cilantro-lime rice for a satisfying meal! ๐
Ingredients
For the Rice:
2 cups long-grain white rice ๐
3 cups chicken broth
1 lime, juiced and zested ๐
ยผ cup fresh cilantro, chopped ๐ฟ
2 tablespoons butter ๐ง
For the Chicken:
2 pounds chicken breasts, diced ๐
2 tablespoons olive oil ๐ซ
2 teaspoons chili powder
1 teaspoon cumin
1 teaspoon garlic powder ๐ง
Salt and pepper to taste ๐ง
For the Street Corn:
4 cups corn kernels (fresh or frozen) ๐ฝ
ยผ cup mayonnaise
ยผ cup Mexican crema or sour cream ๐ฅ
ยฝ cup cotija cheese, crumbled ๐ง
1 tablespoon chili powder
1 lime, juiced ๐
2 cloves garlic, minced ๐ง
For Assembly:
Diced red onion ๐ง
Fresh cilantro ๐ฟ
Extra cotija cheese ๐ง
Lime wedges ๐
Hot sauce (optional) ๐ถ๏ธ
Directions
1๏ธโฃ Cook rice in chicken broth. When done, stir in lime juice, zest, cilantro, and butter.
2๏ธโฃ Season chicken with spices. Cook in olive oil until golden and cooked through.
3๏ธโฃ For corn: Cook kernels until charred. Mix with mayo, crema, cheese, chili powder, lime juice, and garlic.
4๏ธโฃ Assemble bowls: Layer rice, chicken, and street corn mixture.
5๏ธโฃ Top with red onion, extra cotija, cilantro, and lime wedges.
