Fall is here, and honestly, ingredients aside, our team is the whole reason we get excited for the season to turn.

New produce starts showing up, the menu starts to shift, and this crew makes all of it look easy, night after night. We are endlessly thankful for each and every one of them.

We glaze ours with honey and garlic, so you get sweet cantaloupe, salty jamón, and something a little sticky and savory holding it all together. It’s the kind of bite that disappears before you mean for it to.

WHAT! Travel + Leisure just named our home Folia at Appellation Healdsburg one of the 25 best new hotel restaurants in the world. This is a big one.

A year ago we were serving our first dinners and still figuring out what this place was going to be, and we still kind of are, but now this. We have so many people to thank, things to say, but no one will read it all so we’ll keep it short and sweet.

Thank you to Ray Isle and Maya Kachroo-Levine Jacqui Gifford for sitting down with us and for writing something so generous. Thank you to our team, front and back, who are the entire reason this happened. And thank you to everyone in Healdsburg who has pulled up a chair since we opened.

Happy one year to us! And this is what has stayed the same about Folia.

From our very first dishes to now, we’ve kept one thing at our core; letting the ingredients shine through, supporting local purveyors, getting veggies from small farms, changing our menu often, and always remembering that hospitality is really about the feeling you get the moment you walk through our shared doors.

Thank you to everyone for your continued support as we’ve grown this past year.

To our people, front and back, the folks who wash our dishes, serve you every night, and manage the floor, we thank you. For spending very long nights, long days, and the moments in between with us.

This is the dessert everyone stops scrolling for.

Hazelnut dacquoise on the bottom, a chocolate hazelnut mousse built up around it in a mold, then unmolded and finished with a mirror glaze so shiny you can see the kitchen lights in it.

It looks like it took all day, because it basically did. Totally worth it!

Tess Housholder runs our w**e program, and if you have sat at our table you already know why she has been written up in Vogue, Sonoma Magazine, Imbibe, and more. She is nominated for Best Sommelier in the Healdsburg Tribune Best of 2026!

What most people do not see is how much of her runs through this entire property at Appellation Healdsburg, not just our dining room. The w**e list, the staff training, the way this place thinks about what is in your glass, and so much more!!
