I haven't posted in years. Yet remains on my vision board.

This is my new practice kitchen.

Learning how to smoke meats with my simple rig.

Doing an Aldi pre seasoned Pork Roast, added some extra spices to the rub.

This is mainly a tech test as I am trying out a new digital thermometer! It has an app!

I am monitoring my smoke from inside with AC.

I love the future.

SO this has sat here quite a while, as I focused on family and my other life passions. Now it is happening. I found a certified kitchen that is local, and shortly will be getting inspected so I can start making tasty foods to sell!

I have come to the conclusion, I need a new smoker :( The one I have is crazy inefficient. I have tried all the mods to make it better, but alas it just requires too much maintenance and fuel to keep temps correct. During my last smoke that was 15 hours long, I had to check on it every 45 minutes to an hour. So no sleep. I guess I should start looking for sponsors? Perhaps I can barter and trade pottery and graphic design? Suggestions?
