Saint Patrick's Day and almost spring time. How about Roasted Rack of Lamb with Colcannon (traditional Irish cabbage mashed potato). Chef Adam is using Tuscan kale-leek in creme fraiche mashed potatoes and placed over sautéed spinach and served with fresh mint Cabernet demi glacé reduction.
