Introducing Chef Wes
Wesley, a Ponchatoula native, began working in restaurants at the age of 15. He worked his way up the ranks becoming a sous chef and eventually managing partner.
In 2022, frustrated with the state of the food service industry, he created Rogue Gastronomy with a simple idea; expand the possibilities of what can be done with food.
He began making a name for himself selling fresh pasta at the Hammond Farmers Market and spent the next few years refining his skills as a pasta maker.
Once established as the premier pasta designer in the area, he used his new platform to build the Rogue brand through giving back to the community by donating to local food banks, sponsoring community theater, and mentoring young chefs.
