Celebrating a special birthday today (my momma's!) with this cookies n' creme cake - filled with cookies n' creme mousse, covered in cookies n' creme buttercream, and topped with a chocolate ganache... and oreos.

Sense a theme??

Another year means another cake for someone in my family that doesn't like frosting or sweets that are actually sweet... but does like cannolis!

So this is my take on a cannoli cake: mascarpone flavored cake layers with dark chocolate chips, layers of ricotta cannoli filling, just enough buttercream frosting to keep it from falling over, and garnished with pistachios!

I need more frosting and chocolate myself, but it's not my birthday cake I suppose. 🤷‍♀️🤣
