Mimis Pórtico was one of the hardest and most fulfilling things I have ever experienced in my 36 years on this earth. I was so consumed with making the best pizza, doing the most events, and making it all worth it that I didn’t realize how brave it was. A lot of things could have gone horribly wrong, and I feel incredibly grateful for the support everyone showed me for the years of this pizza businesses life.

I started this dream in 2019, and it completely changed my life. I have written these letters of my feelings to Mimi’s. This time it’s different. This time I look in my backyard and the blue trailer is no longer there.

The new dream is being a healthy, happy person with my friends and family. A plan to create an outdoor kitchen where I can invite friends over for pizza parties and stay in the amazing pizza community. 🔥🍕

Sopranos baked ziti pasta tray for a Sopranos party. Spicy Italian sausage and bell peppers were my notes, and that’s what they got 🍝

Y’all don’t play! I came out of pizza dough hibernation, and I had 13 orders to fill last night after my 8-4 job.

Luckily it’s like riding a bike. Anyone that got dough or a pizza kit, please share photos of your creations with me :)

It took a long time to accept that I’m selling this trailer, and I spent a lot of time not wanting to calculate the worth because I didn’t want to have to sell it.

It is time. I want someone who loves food and pizza to carry on the legacy of this trailer, and I am willing to openly talk about options. That being said. I put in a lot of time, money, and hours into this trailer along with a lot of people who helped me make it as wonderful as it is.

I made a pizza and pasta dinner for a friends company party last night, and it was very nice to set up in a backyard on a porch and crank pizzas out for people again.

Sure, I got stressed about forgetting pepperoni, but as soon as I started putting pasta out and pizzas were filling the buffet table people were so happy. Pizza just makes people so happy every time.

I have never seen someone look mad while eating pizza, and if they did, they probably need to talk to someone or go touch grass.

My trailer is for sale, but I’ll never stop loving pizza party’s. Also, cranking out the OG Roccbox was awesome. I’m impressed by how many pizzas I can crank on such a small oven. One guy came out and said “oh wow, you just have that little oven and you’re making all those pizzas”?
