As a born-and-raised Montanan, I've always believed there's something special about creating with your hands. From hunting, fishing, and foraging across Montana's rivers, mountains, and prairies to learning the craft of cooking at Boxcar Bistro in Missoula, I've spent my life chasing the satisfaction that comes from turning simple ingredients into something meaningful.

This weekend we're featuring our handcrafted striped pasta, filled with a rich blend of three cheeses and finished with toasted pine nuts, fragrant truffle oil, and a silky lemon-thyme cream sauce. Long before I became a chef, I spent countless days wandering river bottoms, mountain trails, and hidden timber patches searching for wild mushrooms. Foraging has been a part of my life for as long as I can remember, and that connection to the Montana wilderness inspires so much of what we do at River & Range Bistro.
