Who needs a bowl of pic me up?
We got you! ๐ค Say hello to Italian Orzo Soup!
Ingredients:
- 1 yellow Onion, diced
- 1 cup Celery, diced
- 1 cup Carrots, peeled and diced
- 1 Bell Pepper (any color), seeded and diced
- 2 Garlic Cloves, minced
- 1/2 TBSP Oregano ๐ฟ
- 1 14.5 ounce can Diced Tomatoes
- 6 cups Veggie Broth
- 1 cup Orzo Pasta
- 1 15.5 ounce can Great Northern Beans, drained and rinsed
- 1/2 Lemon ๐, juiced
- 3+ TBSP Parsley, chopped
- Sea Salt and Pepper, to taste
Optional: Red Pepper Flakes, Cashew Cheese*, More Parsley for topping
*Cashew Cheese: 1 cup Raw Cashews, 1 cup Water, Sea Salt blended in High Speed Mixer for 1 Min.
Directions:
1. In a large soup pot over medium heat drizzle olive oil. Add onions, celery, carrots, and bell pepper. Cook for 10 minutes, stirring occasionally.
2. Add garlic and oregano. Cook for 1 minute.
Add diced tomatoes, broth, orzo, great northern beans and bring to a boil, stirring occasionally.
3. Once boiling, reduce heat to low and simmer for 15 minutes, or until the orzo is the way you want. Add lemon juice and parsley. Season with salt and pepper to taste.
4. Add your favorite toppings! Boom!! ๐ฅ Get your soup on!
