Wednesday, May 6th at 7pm, join us for an evening featuring 5 different libations paired with 5 courses from our kitchen and an infinite and immeasurable amount of fun and revelry.

All priced at $120 per person.

For one evening only, The Pullman transforms into your favorite Parisian bistro (with maybe a quick detour through Burgundy and the South of France along the way). A Celebration of Our Roots: Six89 Revisited

This evening is particularly meaningful to us, as we take the opportunity to honor our roots and pay tribute to the restaurant that helped shape everything we do today—Six89.

For those who remember, Chef Mark Fischer opened Six89 in Carbondale in 1998, helping to put the lower valley on the culinary map with a focus on bold, thoughtful, and deeply satisfying food and drink. The Pullman has always aspired to carry that spirit forward—serving as a more approachable, everyday reflection of the ethos that Six89 established nearly three decades ago.

We’re honored to welcome Mark Fischer for the evening, who will be joining us in the kitchen to showcase a selection of his classic dishes, alongside a few new interpretations. Bill Bentley will also be with us, pouring wines thoughtfully paired to each course.

For those who miss Six89—or for those who never had the chance to experience it—this is a rare opportunity to revisit (or discover) a piece of that history, one course at a time.

Fifteen years—and still going strong.
We will be closed this Wednesday to celebrate our 15-year anniversary with the incredible people who make this place what it is: our staff.

We are beyond proud and deeply grateful to be marking this milestone. In our line of work, fifteen years might make us “old,” but we feel just as young, hungry, and inspired as ever—ready to take on the next fifteen.

To our guests: thank you. Thank you for choosing us, supporting us, and allowing us to be part of your lives over the years. On your best days and your hardest ones, it has always been our hope to be a place where you feel warmth, comfort, and a true sense of community.

Most of all, thank you to our staff—past and present. You are the heart of this place. You do the heavy lifting, day in and day out, and The Pullman simply would not be what it is without you. Whether you were with us for a season or you’re one of the incredible few who’s been here since day one, we cannot thank you enough.

Here’s to the memories we’ve made—and to the next fifteen years.
