At the same time, we are looking to strengthen our local economy and preserve the traditions and heritage of family farms in our area. Here at Buckeye Valley Beef Cooperative, we work with * 2 * wonderful, local honey vendors. Lipps Smackin' Good Honey and Poplar Knoll Farms! We do this to keep you stocked year round with local honey. This stuff is so good we cant keep it on the shelves.

This weekend we got the news that Lipps Smackin' Good Honey will be returning VERY soon! Keep your eye on our social to see when it hits the store.

Poplar Knoll Farms honey will stay on the shelves too as well as their whipped honey, pure maple syrup, and maple cream! The whipped honey and maple cream are a spreadable consistency great on bagels or toast (especially sourdough).

Have you ever went to the grocery store and noticed the beef is bright red in color. You bought it and stuck it in your freezer or fridge only to pull it out later and notice it turned brown? Don’t throw it out! It didn’t go bad.

That brown color is a natural process and the result of the packaging reducing the amount of oxygen making contact with myoglobin.

You will notice that some of our meat will look the same in our shelves and delivered to your door. Our meat is flash frozen and placed into a vaccum sealed package instantly depriving the meat of the oxygen coming into contact with myoglobin. We don’t use any preservatives to retain the bright cherry red color either, so what you see is the result of a natural process. Simply take it out of the package and watch the color change back to a cherry red again once it gets oxygen coming into contact again. So, next time you see that the color of your newly purchased beef has turned brown, don’t assume it went bad. Smell it, feel it, and consider its age and preservation factors (was it properly stored) before tossing.

We might be out of Ribeyes until Saturday, but you’re not out of luck! We have several Delmonico Chuck Eye steaks in stock.

These are also know as The Butcher’s Ribeye because they often kept these prized secrets for themselves. Some even refer to it the Poor Man’s Ribeye. The Chuck Eye is a smaller cut than our Ribeyes.
