Chateaubriand, It is the thickest, most tender part of the beef tenderloin (the same muscle that produces filet mignon).
Origin of Name: Named after the 19th-century French aristocrat and author Vicomte François-René de Chateaubriand.
Preparation: Traditionally, this steak was grilled between two lesser pieces of meat that were discarded after cooking, though today it is usually roasted or grilled simply and served with béarnaise sauce or a red wine reduction.
