Thursday technique: everything cut before the fire is on.
At Cracked Pepper, we prep before we cook. Onions diced. Herbs picked. Sauce in the pot. Every station is set before the first ticket comes in. The cooks call it mise en place. Everything in its place.
Once the pan is hot there is no time to go find the garlic. That is how garlic burns.
Try it at home tonight. Cut everything first, put it in little bowls, then turn on the stove. Dinner gets calmer.
What's the one thing you always forget to prep until the pan is already hot?
