After nearly ten years of serving this incredible community, this is one of the hardest things we've ever had to write.
Billikens Smokehouse will be ceasing operations at our location at 623 Caroline Street in Fredericksburg on November 26, 2026.
This decision did not come lightly. Our family and staff have poured countless hours, endless effort, and a whole lot of heart into creating something truly special here. What makes this announcement even more difficult is that we're currently having our best year since opening our doors. But as Frank Sinatra once sang, "That's life."
We cannot begin to express the gratitude we feel for your unwavering support over the years. From first dates and family dinners to celebrations, live music, and late nights with friends, you've allowed Billikens to become far more than just a restaurant.
You've made it a community. None of this would have been possible without you, and for that we will be forever grateful.
To our staff, past and present:
Thank you. Thank you for believing in us, for believing in Billikens, and for showing up day after day with dedication, pride, and heart. You were never just employees - you became family. Together, we've celebrated victories and created memories that will stay with us forever. Thank you for helping turn a dream into something far greater than we ever imagined.
So, what happens next?
Billikens is NOT disappearing. We've worked far too hard to let that happen.
As we enter this next chapter, we'll be focusing heavily on growing our catering operation and expanding our reach throughout the region.
Weddings, corporate events, retirement parties, family reunions, backyard shenanigans, and everything in between can still be filled with all the brisket, ribs, and barbecue you've come to love.
We'll continue to keep everyone updated on what's next for Billikens. And who knows? We may have a little something up our sleeve, so stay tuned.
And yes - we'll be throwing one heck of a farewell party before we close our doors. Details will be announced soon.
Friends, nothing is more constant than change. For everything there is a season, and Billikens is entering a new one. We hope you'll join us for the ride.
In the meantime, if you have photos, stories, or memories from your time at Billikens, we'd love for you to share them. We look forward to spending these final months with you at βThe Chimneysβ and celebrating everything we've built together.
This isn't goodbye. It's simply the end of one chapter and the beginning of another.
