Upon requests by many customers, we started serving our noodles for To Go.
You may order To Go by either

1. Walk-in order at our restaurant
(we do not take orders by phone)

2. Door Dash(preparing to launch anytime soon)

Please be aware of the followings,
・we can only serve Tsukemen noodle amount up to X-Large(400g) because of packaging issue.
・we can only serve cold noodles for Tsukemen
And if possibe, we suggest you to wash Tsukemen noodle before you eat. It will regain the chewyness of noodle a bit.
・Ramen and Tsukemen, noodle and soup will be packaged separately.
・estimated time of waiting will be varied depending on the busyness of orders

Miso Butter Abura Soba
(Limited on Monday only)

Let us introduce seasonal limited menu.
Our regular Abura Soba is flavored with special soy sauce and scallop oil.
And we this time flavor the noodle with Miso and Butter, which makes the flavor totally different from our regular Abura Soba.
It will be only served only on Monday, May 1st, 8th, 15th 3days,
20 bowls per day.

Shugetsu Wheat Flour

Our Shugetsu original wheat flour is produced by Nisshin Seifun, largest wheat flour company in Japan. And the wheat comes from Hokkaido, Japan.
This flour is designed to be more close to Udon flour rather than Ramen flour because we wanted to emphasize the chewy texture of our noodles.
By the way, if you want to enjoy more chewy texture of our noodle, we suggest you to try our Tsukemen with cold noodle!!

"Our Cha Siu(pork belly)"
Same as most of our ingredients, our pork belly is prepared in store.
And here is how we prepare...

1. We start from cutting raw pork belly into pieces and cooking it for 100 minutes.
2. Then, pork belly will be marinated in special sauce for 1 hour.
3. After marination, we wrap each belly with cling film to make a shape of each belly straight.
4. Pork belly will be aged overnight in fridge.
5. We hand cut pork belly into small pieces .
6. Each pieces will be charcoal grilled before served with Ramen and Tsukemen.

Our Shugetsu headquarter in Japan

We, Shugetsu headquarter, is located at Matsuyama city in Ehime prefecture, which is located in very west part of Japan.
Dogo Onsen(hot spring) in Matsuyama is one of most famous Onsen in Kapan. And it is said that they have 3000years of history. Matsuyama castle is also famous landmark in Matsuyama. And the cherry blossoms are in full bloom at this moment.
If you have chance to visit Japan, please add Matsuyama as onw of your alternative to visit. You won't regret it.

Noodle making process
This is the signboard of noodle making process on our restaurant wall.
Some of you may wondered what it means because the wordings are written in Japanese. Here is the translation of process

1. Mixing- Hokkaido wheat flour, whole egg powder, salt, Kansui powder and water are mixed in the mixer for 5min.
2. Making noodle dough into noodle sheet- We will make a sheet of noodle out of mixed noodle dough.
3. Folding- Divide the noodle sheet into 2 separate sheets. And press 2 sheets with machine roller. Now we have noodle sheet with 2 layers inside.
We do this process one more time. It will make noodle sheet with 4 layers inside.
4. Pressing- Noodle sheet is too thick after folding process. We press the noodle sheet into adequate thickness for cutting noodles.
5. Cutting- We cut the noodle sheet into noodles with noodle machine.
Noodle will be aged overnight before serving to you.

If you look our noodle carefully, you will be able to see 4 layers inside each string of noodle!

Tips for Cold noodle and Hot noodle

When you order our Tsukemen, you have an option to choose the noodle temperature Hot or Cold. Both Hot and Cold noodle have advantages and disadvantages.

Cold noodle
Advantages
1. Texture of noodle will be more chewy and firm.
2. Noodles will not stick together

Disadvantages
1. The temperature of dippung sauce will get cold faster.

Hot noodle
Advantages
1. The temperature of dipping sauce will stay hot longer

Disadvantages
1. Noodles will stick together because of starchs coming out of noodles
2. Texture of noodle will be soft and will get softer as time goes

無化調 in Japanese means NO MSG.

We don’t use MSG in our products. NO MSG is not something special we care about, but it is a minimum requirement for us.

Our founder Nakagawa believes that our noodles should be naturally safe and reliable. Although it was and is common to use MSG for ramen products, the founder Nakagawa pursued to create excellent quality ramen recipes without MSG. He noticed that MSG is not required to make delicious ramen soup as a result.

We would like to serve our Ramen and Tsukemen safely and reliably.

We make our noodles everyday in the restaurant!!Since we do home made the noodle, we don't have to add any preservatives...

We make our noodles everyday in the restaurant!!
Since we do home made the noodle, we don't have to add any preservatives on our noodle. And we also can control the aging of noodle. Our noodle will be aged overnight before serving to the customers.
