Sometimes a simple cheese hits right. We shred our mozzarella daily, we don’t buy pre-shredded cheese. With the right mix of imported Pecorino Romano to set it off. Extra virgin olive oil. Three day fermented dough using only 00 flour from Italy, water, salt and yeast. Cooked at 900 degrees.
