Good evening, Big Family,

Progress at General Phở Vietnamese Kitchen (944 N Dixie Blvd, Radcliff, KY) continues to move forward. We are getting closer every day, but there are still many important steps to complete before we can open our doors.

The electrical work and trimming around the commercial hood still need to be finished. Plumbing for the sinks and gas lines also needs to be installed. Our plumber has requested that all required equipment be in place before he can run the gas lines, so we have been busy ordering the remaining items we need. Trimming and painting are currently underway, and the seating tables by our two large front windows have now been installed.

It feels so close, yet there is still so much to do. We are hopeful that we can open before the kids head back to school. One of the biggest reasons we decided to open a brick-and-mortar location was so we could better care for our two young children while our older kids begin their next chapter and leave for college.

If you happen to see us at the building, please stop by and say hello! We are usually there on days when the food truck is closed, working on cleanup and preparing the restaurant for opening day.

Good evening, Big Family,

As progress continues at General Phở Vietnamese Kitchen (944 N. Dixie Boulevard, Radcliff, KY), we would like to invite you to take a sneak peek through the doors and windows while we allow the floors to cure from the sealant application this week.

Our small business has been built with the help of family, good people from our community, and the unwavering support of our customers. We did not rescue and rebuild this old building on our own. Along the way, many people have stepped in to help, some of whom have asked for no recognition at all. Their kindness and generosity have helped carry us forward.

It has been a long journey, and while we are getting closer, there is still much work to be done. The kitchen hood still needs to be completed, plumbing work remains, and much of the equipment still needs to be purchased and installed.

You may notice some used equipment in the photos. Over the past several months, instead of paying ourselves, we have invested every extra dollar back into the restaurant by purchasing one piece of equipment at a time. Commercial refrigerators, fryers, warmers, and other restaurant equipment are expensive, and we simply could not buy everything at once. We waited for holiday sales to purchase items such as our TVs and other necessities whenever we could save a little money.

This project has never been about taking shortcuts. It has been about perseverance, patience, and taking one step at a time. Some days the progress feels slow, but as long as we keep putting one foot in front of the other, we continue moving forward.

Thank you for following our journey. Thank you for your encouragement, your support, and your belief in our dream. Most of all, thank you for being part of our Big Family.

Good evening, Big Family,

Another week has gone by, and another step forward has been made at General Phở Vietnamese Kitchen (944 N Dixie Blvd, Radcliff, KY).

The commercial hood system was installed on Friday and again today. It still needs electrical connections, the fire suppression system, and final trim work, but it is exciting to see another major piece of the project coming together. While we do not do a lot of deep frying besides our spring rolls, we spend many hours cooking beef broth and grilling meats, so a quality hood system is essential for our kitchen.

The walls and trim work are still in progress throughout the building. The dry storage area still needs flooring, and we are awaiting the installation of the gas lines and plumbing for the sinks. The deck is also coming along, but it still needs handrails for safety. We have also been exploring the idea of adding a water feature near the deck, such as a pondless waterfall, to create a relaxing atmosphere for our guests. However, we need to prioritize the essentials and make sure everything fits within our budget first.

There is still a lot left to do, but we will keep moving forward, steady and determined, just like the old turtle in the race. Building something meaningful takes time, patience, and perseverance.

Good evening, Big Family,

As progress continues at General Phở Vietnamese Kitchen (944 N Dixie Blvd, Radcliff, KY), we are moving forward step by step. We understand that nothing worthwhile is built overnight. As a small business trying to build something meaningful for our community, it takes time, patience, and perseverance.

The exterior lights are now on, and work continues inside the building. The flooring has been installed throughout most of the restaurant, and both the men's and women's restrooms are coming together nicely. We are still awaiting the installation of the hood and ventilation system, but at least the HVAC system is running and providing cool air throughout the building, making it much more comfortable than before.

There is still plenty of work ahead. The plumbing will be completed once the flooring and wall work are finished. We are also excited about the outdoor deck, which will provide a space for our Big Family to gather, enjoy great food, and spend time together on beautiful days.

We truly appreciate all the support we have received along this journey. This building is not being built by us alone. It is being built with the encouragement, support, and belief of so many people who have helped us along the way. We cannot wait for the day when we finally open our doors and welcome everyone inside.

Good evening, Big Family,

Sorry for the late congratulations post to Sabor Cubano. The days we are closed are often longer than the days we are open. As they say in the restaurant business, 90% of the time is spent preparing, and only 10% is spent selling.

We would like to congratulate Sabor Cubano on their Grand Opening today at 10:30 a.m. Our family had the opportunity to enjoy the wonderful food samples they provided. My three kids and I enjoyed them so much that we stayed until they officially opened at 11:30 a.m. so we could purchase more food to bring home for the rest of the family who could not attend.

While we may not be able to travel to Cuba, we are fortunate to experience the culture, traditions, and flavors of the Cuban people right here in our little town.

We wish Sabor Cubano the very best of luck and hope their restaurant is filled with happy customers every day. Please stop by and support this wonderful local business.

Good evening, Big Family,

We didn’t post any updates on our journey yesterday because Memorial Day is an important time for us to pause, reflect, and honor those who made the ultimate sacrifice for our country.

The new flooring is now being installed in the building, and there is still a lot of work ahead before we can get there. Every day brings us one step closer.

One of the hardest parts of running our business and what keeps us awake at night is not the long hours of work, but the rising cost of goods and the difficult decision of raising menu prices. We have been contemplating this for the last few weeks as gasoline, shipping, and food prices continue to increase.

Unfortunately, beef prices have not gone down in over a year, and many of our dishes depend heavily on beef. On top of that, many Vietnamese food products are imported overseas through diesel powered shipping containers, which also affects costs. Because of inflation, we will have to increase some Phở items by 70 cents just to help cover the rising expenses.

We are fortunate that we do not use a large amount of frying oil besides for Spring Rolls and fried eggs, but even frying oil has increased from $28 a couple of months ago to $37 this past weekend.

Rural King used to be a good place for us to refill propane weekly at $2.99 per gallon, but it has now increased to $3.49 per gallon. Tractor Supply in Elizabethtown is still around $2.99, but with the travel costs in our hungry old V8 Nissan Armada, it no longer offsets the savings with today’s fuel prices.

Even with all of these increases, we are still trying our best not to raise anything by more than a dollar because we want to keep our food affordable for everyone to enjoy.

Good afternoon, Big Family,

Memorial Day means more to me than words can fully express.

My family came to America through the Humanitarian Operation Program after the Vietnam War, carrying the pain of loss, separation, and the memories of everything we left behind. Like many Vietnamese families, we arrived with very little, but with hope for freedom, a better future, and an opportunity to rebuild our lives.

America gave our family a second chance, a chance to work hard, raise our children in freedom, and build something meaningful through General Phở Vietnamese Kitchen. Today, seeing our oldest daughter graduate from high school is a reminder of how far our family has come and the opportunities made possible through sacrifice, perseverance, and faith. That opportunity came because of the sacrifices made by brave American service members, South Vietnamese soldiers, and countless families forever affected by war.

Having served myself, I understand that behind every uniform is a family, a story, and a sacrifice. I have personally experienced the loss of brothers and sisters in arms from the 507th Maintenance Company during OIF I while serving with A Battery, 5/52 ADA, and I have also seen those who did not make it home during OIF II and III when I served with Charlie Med, 225th FSB. Memorial Day is especially for those who never made it home, the heroes who gave their tomorrows so others could have theirs.

Every bowl of phở we serve carries a piece of our journey: resilience, gratitude, survival, and love for both the country we came from and the country that welcomed us with open arms.

During this weekend, we honor the fallen, remember the sacrifices of those who served, and give thanks for the freedoms and opportunities we are blessed to have today.

From our family to yours, thank you to all who served and to the families who continue to carry their memories. We will never forget. 🇺🇸❤️

Good evening, Big Family,

Finally, the wait for three-phase electricity is over! We received the electrical upgrade for the General Phở Vietnamese Kitchen building.

The electricians were extremely professional and true experts in their field. Watching the four-person crew work together was impressive. From digging the hole for the new electrical pole, installing three transformers, replacing another transformer on the adjacent pole, anchoring the pole, and running the cables to the building, everyone knew their role and worked together like a well-trained team in the Army to complete the mission in just a couple of hours. With this upgrade completed, we can now move forward with installing the commercial hood system.

Today, the walls received their primer coating, and the flooring was prepared with a floor-leveling mixture before the new floors are installed. The HVAC team also returned today to finalize their systems.

On hot days like today, we are reminded how comforting it is to sit down in a cool place and enjoy a hot bowl of phở, made with broth simmered for over half a day with beef bones, spices, and seasonings to help rehydrate your body with this nutritious broth. Or perhaps a refreshing vermicelli rice noodles with fresh lettuce, cucumbers, mint, pickled carrots, and daikon, topped with marinated grilled meats and spring rolls.

It feels like we are getting closer, but there is still a lot of work ahead before we can officially open our doors.
