Most people never see this part... but it's one of the reasons consistency matters.
Even after working 6 days straight, I still make time for daily cleaning and maintenance. It would be easy to say, "I'll do it tomorrow," but this is exactly why I don't.
The first part of this video shows the difference between the old and new head cap diffuser plates. Over time, the old plates developed wear and divots, affecting how water was distributed through the espresso puck.
The photos at the end show the result. A properly extracted espresso puck should be even, hold together, and break apart almost cleanly. Small maintenance items like this are what help ensure every shot of espresso tastes the way it's supposed to.
