Hate that we have to write this today….
Accountability starts at the top, and today we are communicating with you directly regarding a recent health inspection report. On October 5, 2026, Caroline’s received a score of 59 U from the Georgia Department of Public Health.
We want to be absolutely clear with you: we do not accept this score as a reflection of our kitchen's reality, but we completely own the responsibility to address it. We respect the health department and recognize the critical job they do for our community.
However, we fundamentally disagree with multiple items they flagged during this visit. For transparency on how these points are tallied, one of the violations involved uncovered (cooling down) par-boiled potatoes. These were prepared fresh that same day and are fried to order at 375 degrees for five minutes—a process that ensures food safety and quality. While this practice clashed with the inspector's administrative checklist, it poses absolutely zero risk to our guests. Every one of our managers has passed ServSafe, the health departments gold standard for food operations. Our facilities are not dangerous, nor are they operated in an unacceptable manner. In fact, our team consistently does much more than is required to maintain a pristine culinary environment.
We are not going to fight a government agency or make excuses. Even as standards shift without notice, their standard is the one we are required to meet, and we will go above and beyond to align with it. We have immediately adjusted our internal protocols to ensure their specific compliance markers are met without compromising the quality of our food.
Our commitment to you is unwavering. Our operation is safe, our standards remain exceptionally high, and our team's dedication is stronger than ever. We will have a reinspection this week, an adjust the protocol asked for. We look forward to welcoming you in to experience the excellence you expect from us.
Sincerely,
Nick, Alison, and Roland
