The weather tried to cancel dinner. It failed.

120 guests. Texas brisket, BBQ chicken thighs, smoked bacon mac & cheese, and my soon-to-be-famous peach baked beans for the Special Forces Association Chapter 111 Fall Gala in Johnson City, Tennessee.

What the flyer doesn’t show: 60 mph wind gusts, flying pans, a runaway pop-up, and a table umbrella I had to deflect while preparing dinner. No cook photos this time. Keeping dinner on track took both hands.

A huge shout-out to Johnson City Country Club and the crew who jumped in to help. I’m grateful for your hospitality, teamwork, and support through one wild cook.

Everybody ate. Mission accomplished.

🔥 We’re still out here cooking, catering, and teaching BBQ classes almost every week! 🔥

Wednesday’s class was an absolute blast! We taught the crew how to make ribs, chicken, smoked mac & cheese, and our soon-to-be-famous peach beans. And yes… everybody left FULL! 😂🔥

Our BBQ classes aren’t the kind where you stand around watching somebody cook and get two bites at the end. We cook, we teach, we laugh, you get hands on, and we EAT. You’ll learn the techniques we use, get our recipes, and sit down to some seriously good BBQ when we’re finished.

If your company, organization, military unit, or team is looking for something different for a team-building event, morale day, or just a reason to get everybody together, we’d love to cook with you.

It’s been a busy past few weeks but I got a little bit of a break with a week at Camp Perry OH shooting with the team at the National Matches. We had one of our teammates get yhe distinguished shooters badge. The medal he is wearing is only the 3rd badge ever produced for a disabled shooter! He put in the work, dry firing and weekly live fire range practice and it paid off!!! Looking forward to next year!!!

The body might feel the grind, but the mission is what matters. Honored to close out the weekend fueling the crew at Combat Warriors Inc. It was a tight event, but a deeply meaningful one for a phenomenal cause.

Thai Kor Moo Yang (Bud Wisers bbq style)!!! Taking a break from the smoker to run some Thai-style pork over direct charcoal. Hit with a heavy sear and paired with a scratch-made Nam Jim Jaew for that necessary acid/heat balance. No fluff, just flavor. Duroc pork rib eye marinated in garlic, cilantro stems, and fish sauce! This has become a staple in our weekly menu!!!
