people ask us all the time — why NUE? why no bánh mì? why isn’t the menu more traditional? 🤍

NUE is named after a 1931 painting by Lê Phổ, a pioneer of Vietnamese modern art and our founder’s great-grand uncle. He spent his life proving that you could honor your roots while embracing something entirely new. that Vietnamese identity could be both traditional and modern. both deeply rooted and fearlessly creative.

we’re not trying to replace traditional Vietnamese food, we love and respect it deeply. we’re asking a different question: what does the future of Vietnamese dining look like? what happens when you take the flavors, the philosophy, and the soul of Vietnamese cuisine and reimagine it for a modern table?

Garden in the Sky. 🌿🌸

This one was inspired by Lê Phổ — the pioneering Vietnamese modern master artist and our founder’s great-grand uncle, who spent his life painting serene garden scenes as his personal sanctuary. The pear foam on top represents a soft cloud. The rose petals, a blooming garden. As you drink, the liquid beneath is meant to evoke rain falling from that cloud — light, refreshing, and floral.

This June, every sip counts. 🌿🤍

We are proud to announce that NUE is participating in Sip With Purpose campaign in celebration of Immigrant Heritage Month and Pride Month.

Throughout the entire month of June, 20% of all sales from our ‘Garden in the Sky’ cocktail and ‘Lê’s Passion’ mocktail will be donated to Ayuda, an organization that provides critical legal, social, and language access services for immigrant families across the DMV.

As a Vietnamese-American owned restaurant, this cause hits close to home. We know firsthand what it means to build something in a new country, to navigate complex systems, and to find community along the way. We are honored to stand in solidarity with immigrant families this month.
