A Texas barbecue joint just did something that feels almost illegal.

They took brisket off the regular menu.

Not because people stopped loving it. Not because they suddenly decided turkey was the future. The cost of brisket has climbed so much that it had become an enormous part of the restaurant’s grocery bill, while sales were no longer keeping pace.

Customers immediately started trying to save it.

Some suggested charging more. Others floated preorder-only brisket, weekend brisket, or making it a special instead of removing it altogether.

And you can understand both sides.

Restaurants have to survive. Meat prices are brutal. Sometimes the numbers simply stop working.

But this is Texas.

Brisket disappearing from a barbecue menu still feels like walking into a honky-tonk and finding out they quit playing country music.

The ribs may still be good.

The sausage may still be smoking.

The potato salad may still be sitting there doing its job.

But everybody is going to notice that empty spot on the tray.

If brisket is becoming too expensive for Texas barbecue joints to keep on the menu, we may officially be entering some strange times.
