📖 31 Days of Fox & Owl – Day 28 🍺 Gyle 59

Why does our brewery have a different name to Fox & Owl?

The answer starts around 13 or so years ago with Jon and Amanda.

They founded Gyle 59 with a passion for brewing naturally hazy b**r using spring water, heating the mash water with a log burner and, later, powering it with solar panels. They blended all of that into a little bit of brewing wizardry.

After countless recommendations for b**r to get for our pub, we decided to stock their b**r… then COVID happened.

Not long afterwards, Cellar 59, Lyme Regis’ much-loved craft b**r bar, came onto the market. We approached Jon and Amanda about buying the company and, after taking it on, moved it to another location in Lyme Regis where we had more freedom to create the venue we imagined.

That relationship became so much more than buying a business. It led to us running B**r Festival Saturdays at the brewery, years of friendship, learning the brewery inside and out, bringing Nick in to learn the brewing wizardry and, finally, in 2025, completely taking over Gyle 59 ourselves.

The adventure doesn’t stop there either. Now that we’ve started brewing in the States, our plan is to share Gyle 59 not only across the South West, but throughout our Fox & Owl venues on both sides of the Atlantic.

Cellar 59 has now returned to its original home next to our little cinema and pizza place. After carrying that sign around for years, it finally gets to hang where it belongs.

🍺 Today’s Brewery Tidbit…

A gyle is the name given to a single batch of b**r. Every brew is recorded as Gyle 1, Gyle 2, Gyle 3… allowing brewers to track recipes, techniques and any changes in flavour over time.

So why Gyle 59? Because it’s the batch of those born in 1959. A mighty fine batch indeed… and one that gave us the opportunity to become part of such a wonderful brewery and continue its story.

One of our favourite b**r ranges is the Capitalist Hippie series. A perfect reflection of Jon and Amanda.

Business savvy, incredibly knowledgeable… but always wonderfully hippie.

To celebrate that, the Hippie Squared bottle features them in business suits with one little giveaway… Tie-dyed socks. 🍺✌️

📖 31 Days of Fox & Owl – Day 27 🍺 Nick

Today’s post is all about Nick, our brewer.

Back in 2023, a postman arrived at Gyle 59 with a few questions about brewing and his passion for home brewing.

It didn’t take long to realise Nick would fit right in.

We invited him in to learn the ropes, the recipes and the brewing processes that Jon and Amanda had perfected over the years, knowing that one day we’d be taking on the brewery ourselves but would be busy across the whole business.

When we took over the brewery last year, Nick joined us full-time as our brewer.

Since then, he’s become a huge part of Gyle 59, keeping the brewhouse running and making sure every batch is brewed to the standard we’ve always been proud of.

And he’s not just keeping it running…

Earlier this year, one of Nick’s b**rs won an award. 🍻

We’re incredibly proud of what he’s achieved and grateful that he keeps the brewery producing the b**r that finds its way all over the country, as well as into every pint poured in our Lyme Regis taproom.

Fox & Owl has always been about finding good people, trusting them, and giving them the chance to shine.

Nick is one of those people.

So here’s a toast to our brewer.

Cheers, Nick. 🍺

📖 31 Days of Fox & Owl – Day 29 🌕 Full Moon

I know we’ve skipped a couple of days, but they’ll be coming soon. They needed a few contracts signing first and we didn’t want to jump the gun… 😂 You’ll soon see what Georgia’s been working on.

The Full Moon started for one simple reason…

We needed to force ourselves to have a day off.

We knew if we didn’t choose a fixed point every month, there would always be another excuse to work. So we picked something that arrives whether you’re ready or not…

The Full Moon.

Everyone is welcome.

We cook a free chilli (meaty or vegan), I normally throw in a little fire breathing, then we head down for a moonlit swim before returning to the fire for s’mores.

And yes…

We do it all year round, no matter how cold it gets. 🌊🔥

The whole idea was inspired by the wonderfully mad Blue T**s. A lovely friend suggested we join them one evening with some food to celebrate.

Two years later…

We’re still gathering every month beneath the Full Moon.

As more locals joined us, we also began raising money for charities suggested by everyone who comes along.

It’s now a tradition that won’t stay in Lyme Regis. As many of you have already experienced in Fair Grove, Missouri, wherever Fox & Owl goes, the Full Moon goes too.

The nicest compliment came this week. Two families messaged asking when tonight’s Full Moon was so they could plan their annual holiday around it.

Over the years they’ve even added their own traditions. One family always orders the same milkshake, while the other has somehow made an annual water fight part of the evening. 😂

That’s exactly what we hoped these nights would become…

Not our tradition.

Everyone’s tradition.

So tonight we’ll do it all again.

A fire pit.

A bowl of chilli.

A moonlit swim.

And another evening where strangers become friends.

We’ll see you by the fire. 🌕🍺🌶️

📖 31 Days of Fox & Owl – Day 26 🌲 Port Angeles, Washington

“In the state of Washington, under a near constant cover of clouds and rain, there is a small town named Forks…” 🌲🌙

For all our Twi-hards out there… yes, Port Angeles had to get a mention. 😂

The Olympic Peninsula is a place full of stories, from the ones written into books to the ones created by the people who call it home.

But sometimes a place does more than inspire you…

Sometimes it feels like it was waiting for you.

That was Lake Crescent.

The first time we saw it twist into view around the mountains, we knew this was somewhere special. It was the moment we knew America was home.

It also became the place where I proposed to Georgia.

The funny thing is, Georgia had already proposed to me a year earlier on a frozen fjord in Norway. She pointed towards a place without realising it, and a year later I decided to find where that accidental direction had been pointing.

Of course…

It was the ridgeline of Mount Storm King.

Because apparently even our proposals need an adventure attached. 😂

The area has given us more than just landscapes too.

While exploring, we met a chap creating incredible designs on a fence using intricate glass, sculpture and engineering. We asked him for local advice and what started as a simple conversation turned into hours of stories, life and the beginning of a friendship.

That’s what we love about travelling.

The places are amazing, but it’s the people you meet that become the real memories.

And for our Twilight fans, when you visit the area you can explore the famous Quileute connection from the books and films, and they even hold a yearly movie festival celebrating Twilight.

The Olympic Peninsula feels like a place built from adventure, nature and stories waiting to be told.

And if you know Fox & Owl…

You know we can’t visit somewhere inspiring without a few ideas appearing. 😂

🌲 Today’s Washington Tidbit…

Port Angeles sits at the gateway to Olympic National Park, where mountains, forests, coastline and wildlife all meet.

It’s a place where a simple drive can turn into an adventure…

And for us, a place t

Day 25 - Fossil Fest

Every June, Lyme Regis is made busy by the Fossil Festival.

It’s a weekend full of fossil nerds doing what they love in what feels like the home of the fossiling community.

For us…

It’s our equivalent of football season. 😂

The fossil spirit doesn’t stop there either. Throughout the year our fossil corner is kept alive by Cameron, Richard, Kate and Mihai, with Chris from Fossilwise regularly hosting fossil talks at Fox & Owl before leading his fossil walks from the bar. On rainy days, when the cliffs don’t look too inviting, people simply settle in with a pint and let millions of years of history come to them instead.

Chris’s fossils are found throughout Fox & Owl too. His discoveries have inspired much of the artwork around our Lyme Regis venue, and before long they’ll be inspiring the others too.

Over the years we’ve met some wonderful people through Fossil Festival.

Including Sally and Neville, the mammoth people, who invited us to celebrate the end of a successful mammoth dig with b**r and chilli.

And if you didn’t already know…

Fossilers seem to have mysterious holes in the bottom of their pint glasses, requiring very frequent top-ups. 🍺😂

We even brewed a b**r to celebrate a true king among the mammoths.

If you visit Fox & Owl you’ll also spot a signed pizza box from the fossil gang.

It regularly starts conversations like…

“Wait… is that so-and-so?”

“They were all here together?!”

It’s become a little piece of fossil history hanging on our wall.

So here’s a toast to our fabulous, furious, fossiling fiends of frequent, fathomless frivolity.

We can’t wait to one day ferry a few of you across the Atlantic and introduce you to America for Dino Time discussions.

And the best bit?

Every fossil hunter reading this got to “Dino Time”…

…and immediately thought,

“Marine reptile.” 😂🦕🍺

📖 31 Days of Fox & Owl – Day 24 👤 Caroline & Lynn

Today’s post is about two more people who make Fox & Owl what it is…

Lynn and Caroline.

Lynn is Georgia’s mum.

Originally, Georgia asked her to cover a few shifts while Ant and Caroline had their days off. It was only meant to be occasional…

It quickly became obvious she had far more to offer.

As a regular on the cocktail side and a familiar face on nights out, it felt natural to get Lynn behind the bar.

She’s got one of those booming laughs that’s impossible not to join in with, and we couldn’t be happier knowing family has become part of the Fox & Owl family too.

Lynn’s artwork has travelled on all our adventures with us, and we already know every future one will need a little bit of it too.

Then there’s her other unofficial role… chief instigator of party nights.

“We need this costume… this wig… this ridiculous prop…”

…and somehow it always appears. 😂

Caroline joined us thanks to Ant.

He simply said,

“I’ve found the person you’ve been looking for.”

He wasn’t wrong.

Many… many… many… many… many… many… broken glasses later… 😂

…here we are with one incredible team.

Caroline brings warmth, laughter and exactly the welcome we always hoped Fox & Owl would have. After the success of Cajun Day, we can’t wait to see what she and Ant dream up next.

🍻 Today’s Family Tidbit…

Georgia’s dad, Roger, is another familiar face, usually at our Full Moon nights or Thursday jam sessions with his harmonica alongside Georgia on the saxophone. He even makes a guest appearance on the Gold bottle we created for the village shop in Charmouth.

Fox & Owl has never just been about us.

It’s become a collection of family, friends and people who somehow all ended up on the same adventure.

🍻 Here’s to Lynn, Caroline… and the whole Fox & Owl family.
