I don't know who needs to hear this but most of our customers are selling beef faster than they can grow it. Locally grown meat is more popular than ever. With the growing population in Central Texas, it will continue to do so. Everyone needs to be growing more!

This our partner Paul. His main responsibility is HACCP, USDA compliance, and quality control. Its a tiring job. So tiring that he fell asleep while doing his end of day paper work on Monday. We just took his picture, turned out the lights, closed his office door, and we went home. Oh...and did the obligatory photo shop. 🤣 He was not still in there when I got here at 6:30 the next morning.

WW B-Dahl grass doing well. We planted this field early spring and it came up after after getting 1.5” of rain the 3rd week of May. Then we missed all of those rains in June that many others got. Thankfully many of customers got those rains, which is more important in the big picture. We only got .75” in June. I actually did not look at this field for two weeks because it looked like it was going to die. Two weeks ago, we took a peek and surprisingly, it was about 4” tall and a pale green, stressed but not dead. 4 days later we got 3.25”, and another 1” the next day. What a blessing! Not only did that save it, it put some moisture deep underneath and it took off. Nobody likes wasting money or time, but the bigger thing to me is losing a whole year. Thankfully, we dodged that. 🙏

We have a lot of great beef come through our plant. This is some of the best of the best. Our butchers do not take lightly their responsibility to butcher every animal correctly. We are so proud of these guys for the pride they take in their work, and the chemistry this room has shines every day. They took it upon themselves to take this picture this morning in front of these carcasses before butchering them today, because of the pride they have in their work.

We‘ve cooked a lot of I O flank steaks over the years. All of them very good. Not sure what made this one different but It was exceptional. Home grown meal.
