Tomorrow is September 1st but our leaves have been up for WEEKS. I’m finding it more difficult to keep the Halloween stuff packed up than ever because I welcomed fall today by making these pumpkin spice cream cheese muffins and man 🤤

They’re soft, tender pumpkin spice muffins with a light cream cheese swirl throughout, then drizzled on top. I finished them with a sprinkle of some cinnamon sugar. These are MY favorite pumpkin spice muffins because I use all the tricks on them. There’s little hints of maple in the cream cheese drizzle that really helps bring the pumpkin and cinnamon together, and the three together really taste like fall 🍁

I’ll be taking orders for these until after Thanksgiving, so please PM me! I can do regular or jumbo and if you prefer a cinnamon streusel, we can work that out as well.

My kitchen smells great. It feels warm and cozy. Imma go hang up all the ghost stuff now. Bayeeeee! ✌️

Tomorrow is national creamsicle day. Does anyone else here follow the National Day Calendar? I love to write down fun little days to celebrate with the kids. One of our favorites is March 10th, Mario day.

All spring and summer I played around with lemons, limes, strawberries, and raspberries. We made those delicious raspberry white chocolate muffins. We filled several cakes with fresh strawberries. We made quite a few mini key lime pies, and we made some mini crusted lemon silk cups with a blueberry freshly whipped cream. Man, we had fun with fruit these last few warm months.

But I couldn’t forget 🍊. One of the most iconic fruits so rarely incorporated into sweet treats. The juice needs to be concentrated to add enough flavor without over moisturizing most recipes, and there is so. much. orange flavor in the zest. Even when you do see orange baked goods, it’s almost ALWAYS made with orange extract. It can be tricky to bake with, so it tends to intimidate most bakers.

But not me 🥱💅

I squeezed them. I zested them. I rethought all my life decisions. Considered alternative career paths. Contemplated going back to college.

And then I got over myself and made these cupcakes.

They are orange vanilla cupcakes with a rim of fluffy orange buttercream and a creamy vanilla buttercream in the center. Topped with an orange sugar to make them look ✨pretty✨.

Orange Creamsicle inspired jumbo cupcakes. They taste light. Airy. Citrusy. Sweet. A true 10/10. They are hands down the perfect farewell to summer treat, and a wonderful way to celebrate National Creamsicle Day.

Now… can we put up the fall decor yet? I’ve got a TON of orange peels for aromatic simmer pots and I’m ready for hot cinnamon rolls and pumpkin spice mini pies. 🤫😉🍁

I just reeeeally wanted a pb&j last night 😅

These are new, peanut butter and jelly muffins. They taste fantastic 🤤 They have pockets of grape jelly, peanut butter chips, a crumbly peanut butter streusel and a drizzle of jelly to make them look pretty.

I used some of my special tricks to make these muffins tender and melt in your mouth. So you guys who loved my Peanut Butter Chocolate Banana Bread Muffins in the spring because they’re so moist? These are for you 😘.

In the last two weeks I’ve spent around 70 hours in this kitchen.

Seventy. Hours.

And it all started with a little bit of apple pie.

Thank you all so much for sharing my posts, telling your friends, tagging me, and trusting me with the most important piece of your baby’s birthday parties. To those of you I’ve built friendships with, I feel blessed to have met you and I can’t wait to be there for however many more birthdays, events and parties we have together in this fast moving life we live. I couldn’t include every cake I’ve made in the video, and I wanted to show some of where we began, so this is just a few of the ones I feel taught me the most lessons while making them, drew the most attention on socials, and made you the happiest.

The truth is, I came in the kitchen one day in March, feeling overwhelmed with all the change. Stressing about whether my babies were adjusting well and wondering how I could help make everything just a little bit easier on everyone. Missing my family and not knowing how to cope with the racing, anxious thoughts any other “healthy” way, I did the only thing I knew and got a little bit of flour on my hands. I had some fresh empire apples and no plan. A couple hours later, we were giving away apple pie filled cupcakes to our friends and neighbors and within two weeks, I was taking orders for more.

Here we are in July and I can’t even BELIEVE how much I’m doing here. I never would have imagined I’d be packing up and moving from the beach where I grew up all the way to this little area tucked away in North Country, and the amount of love I’ve been welcomed with is nothing short of a dream. You haven’t just made my little mental health hobby into a job. By sharing, tagging and talking, you’ve managed to create an extra stream of income and kept my hands working so my mind can’t get too busy. For that, I am so grateful.
