Ceremonial-grade matcha is used in components throughout our omakase experience.

Our beloved Unagi bite thoughtfully pairs matcha with freshwater eel from Tokyo Bay, first slow cooked in Canadian maple syrup and Sichuan peppercorns. For service, we heat bone marrow to essentially allow us to fry the eel in bone marrow fat until crispy. We finish it with matcha salt, soy, ponzu, and Poblano Kosho.

Matcha is also a key component of our final bite: Chef Margarita’s Matcha Bon Bon: makrut lime-infused ice cream, encapsulated in a matcha white chocolate shell and topped with toasted sesame shortbread cookie. We serve it with a hot matcha, brewed with plum wine, smoked lavender honey, and yuzu.

This summer, beginning Saturday, May 23, we are opening the counter on weekends at Sushi by Scratch: Beverly Hills for a highly intimate, single-seating lunch service at 1:00 PM.

Conceived as a curated window into our signature dinner menu, this 90-minute experience highlights 10 premium nigiri bites, our famous Makrut lime bon bon for dessert, and a refreshing welcome drink upon arrival. Guests will also have the option to add curated beverage flights.

DALLAS: We’re thrilled to be partnering with for a collaborative dinner at Sushi by Scratch Restaurants: Dallas on May 8. This dinner is already selling out, so grab the last remaining seats while you can.

This dinner wil feature a curated selection of sake, as well as a special menu by Chef Tom. The sake pairing portion of the evening will be handled by Yishi Li from Sake Suki, who holds her WSET 3 in both Wine and Sake — as well as her JSA Diploma, a prestigious sake certification from Japan — and our General Manager Cameron McGuire, one of 52 Master Sake Sommeliers in the world.

We’re bringing you our next cocktail feature from the Chicago team: the Japanese Old Fashioned.

In this dramatic, spirit-forward cocktail, we use Suntory Toki Black. Predominantly made from corn, this whisky offers a smokier, richer twist to the original Toki, creating a mellow flavor.

This distinctively creamy Japanese whiskey is blended with our exclusive Chicago bitters blend and finished with a Lapsang Yamahai mist.
