This is which also means prosperity in Lao hence we eat it a lot during the new year and you’ll always find it on the menu at any celebration, along w/ green papaya salad it’s the national dish of Laos. Pretty much pick any protein and we can make laap with it (vegan style tofu works too), done here w/ organic minced chicken. Sautéed shallots and garlic, fragrant fresh galanga root is the holy trinity when making laap. Tossed w/ toasted rice powder, HERB HEAVY loaded w/ many squeezes of lime. Eaten w/ sticky rice, chased w/ soup broth it fills you up without weighing you down, a must try. Serious the perfect protein salad for folks
