proper kosho (Japanese pepper paste) needs a minimum 7 days rest before it’s full flavor can blossom.

we started this blood orange kosho last week so that it would be ready for the Heritage Hops beer pairing dinner this Saturday.

a preview of our portion of the menu:

• silken egg custard. blood orange kosho. mushroom dashi. marinated shimeji caps. fresh scallion greens.
paired w Tommyknocker Blood Orange IPA

• hearth-braised pork belly. layered potatoes. portobello duxelles. shallot thyme reduction.

when the region’s specialty is kurobuta pork, you find it and you buy it and you cook it with reverence in your little airbnb kitchen.

(pork belly that i braised into kakuni and we sliced it up for noodles and donburi bowls along with random-leaf gomae, but it was all so tasty we nommed it straight down and forgot that everything is content 😩

we will be collaborating with them to pair 2 of their craft brews with some creative small plates for the upcoming Heritage Hops beer pairing event in Georgetown CO, joined by one other local brewery and chef!

Standout favorites were:
• the Blood Orange IPA, fresh and zippy

• Pine Bough Pale, a full flavored spruce tip collab with

• the OAKED Butthead Bock, an excellent 9-year-aged & mash-oaked version of their flagship doppelbock, extremely limited quantity they are willing to part with for the pairing dinner! (or pssst someone convince them to just sell the bottles!!)

next step is for me to decide the dishes! oh what direction to go…

for our familiy’s holiday feast this year, the triple chef team of me+bro+mom cranked out:

• citrus medley & fennel bulb salad (sooo good; could’ve ate this for the whole meal!) - bro

• snowcrab chawanmushi (Japanese soft egg custard) with saffron caviar & shellfish dashi - me (got 2 votes for best dish!)

• baby cauliflower veggie roast w yukon golds & cherry tomatoes (which Jeff actually ate!) - mom

• deeply marinated, souvied-till-soft-then-seared short ribs that i would die for (my fave dish of the night, possibly best steak I’ve ever had!) - bro

• shelled lobster & snowcrab buffet w accoutrements (mushroom bacon, buerre blanc, cilantro oil, pickled onions, glazed delicata squash) - me

• dairy-free creamed lacinato kale (was supposed to be spinach but store was out, so kale actually ended up being a happy accident…was chef’s kiss!) - bro

• crab boil e pepe bianco pappardelle pasta (a simple background canvas for the hero proteins) - me

• rum soaked macerated berries & chantilly cream (perfect boozy nightcap) - bro

dinner was so good this year, we might have some repeats going forward. might…

today’s edition of Leftovers Fried Rice: chicken, rice (cooked in Pheastly’s black garlic infused oil from chili crumble production!) with all the random leftover toppings from our soup bar. Then the cherry on top…Tamarind Yakisoba sauce from just pushed it all over the edge 🤌🏼

And oh btw yes, that is most definitely the same sauce line that you remember from ’s show!! So yep, Chef Ali is a Colorado-grown …show her some love!!

we adore starting off holiday season with our double wkend appearance at the annual Christmas Market.

for this year’s hot soup, the good folks chowed down on freshly steamed dumplings in ginger broth, while taking full advantage of our DIY Foodie Confetti toppings buffet!

standout faves included pickled ginger, sweet corn, micro shrimp that i brought back from Japan, fried shallots and julienned radish.

the most popular was hands-down our scratchmade Black Garlic Chili Crumble that people heaped into their soup cups, as well as taking them home as stocking stuffers!

grateful for another time thanks to all of you and in the words of my favorite NSYNC xmas song, Merry Christmas & Happy Holidays 🎶
