There's actually a name for that — it's called the bloom. And it's one of the easiest ways to tell if your coffee is truly fresh.
Here's what's happening: those little bubbles are carbon dioxide escaping from freshly roasted beans. When coffee is roasted, it traps gas inside, and that gas needs somewhere to go. The bloom is that release happening right in your cup — and it's a good sign your coffee is packed with flavor.
Now, if you brew a cup and don't see any bloom at all? That usually means the coffee has been sitting around a while, well past its peak freshness. It'll still make a cup of coffee, but you're missing out on that full, rich flavor freshly roasted beans have to offer.
