The sweet, kind-hearted boy who made us parents is growing up way too fast. We had the best day celebrating him with lots of fun, laughter, and of course, jumbo Funfetti cupcakes topped with cookie dough—because turning 9 deserves something extra special. 🧁💙

We can’t believe how grown up you are, Cole. We’re so proud of the boy you’re becoming and feel incredibly lucky to be your mom and dad.

A croquembouche is not complicated because it needs to be. It’s complicated because every detail matters.

Pâte à choux. Brown sugar craquelin. Vanilla bean pastry cream. Each choux dipped individually in dry caramel, then built one by one, using that same caramel to hold the entire thing together.

There are no shortcuts. You make the choux properly. You make the pastry cream properly. You cook the caramel properly. Then you build it.

It takes time, patience and discipline.

That’s pastry. And that’s why I love it… enjoy friends
