Slow Cooker Broccoli Cheddar Soup 🥦🧀
Ingredients
* 4 cups broccoli florets, chopped
* 1 cup shredded carrots
* ½ medium onion, diced
* 3 cups chicken broth
* 2 tbsp cornstarch
* 1 cup heavy whipping cream
* 8 oz cream cheese, cubed
* 2 cups shredded sharp cheddar cheese
* ½ tsp garlic powder
* ½ tsp onion powder
* ¼ tsp smoked paprika
* Salt & black pepper to taste
Instructions
1. Add the broccoli, carrots, and diced onion to the slow cooker.
2. Pour in the chicken broth and add garlic powder, onion powder, smoked paprika, salt, and pepper. Stir to combine.
3. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours, until the broccoli is tender.
4. In a small bowl, whisk the cornstarch with a few tablespoons of the heavy cream until smooth. Stir this mixture into the slow cooker.
5. Add the remaining heavy cream and cubed cream cheese. Stir, cover, and cook for another 20–30 minutes, until the cream cheese has melted.
6. Stir in the shredded cheddar a little at a time until completely melted and the soup is creamy.
7. Taste and adjust the salt and pepper as needed. For a thicker soup, let it cook uncovered for another 10–15 minutes.
8. Serve warm topped with extra shredded cheddar and black pepper. 🥣
