Chef Jim didn’t name it the “FAT MAN” Philly for no reason.

Cajun-spiced shaved ribeye, Abita braised onions, charred jalapeños, melted pepper jack, and Tabasco-charred scallion aioli are loaded onto a soft roll that barely holds it together.
