It’s Tater Tuesday, y’all, and this week we’re loading up the Irish Nacho.

It starts with fresh-cut fries, fried twice until they’re golden and crisp. Then we pour on warm cheddar sauce, pile on shredded cheddar, and scatter plenty of smoky chopped bacon. Diced red onion and pickled jalapeños bring the crunch and a little kick, and a cool drizzle of sour cream with fresh parsley finishes it off. All the best parts of nachos, piled high in one boat.
