After 12 unforgettable years with our P&J’s Waffle Delight truck (and 14 years since this journey first began in 2012), it’s time for us to share some bittersweet news. ❤️
What started as a small side hustle for the two of us eventually grew into something far bigger than we ever imagined, becoming a full-time career for James, countless memories for our family, and a community we will forever be grateful for.
From early mornings and long event days to meeting so many incredible people along the way, this truck has truly been a labor of love. Being recognized on Yelp’s Top 100 Food Trucks of 2025 was a milestone we will cherish forever, and it would never have happened without all of your support.
Over the years, we’ve had the privilege of working alongside amazing people and serving customers who became friends. To everyone who supported us, booked us, stood in line for our chicken & waffles, shared our posts, recommended us to friends, or worked beside us on the truck — thank you. You helped make this dream possible.
Life has recently led us in a new direction, one that allows us more time to raise our boys and be together as a family. While this decision was not an easy one, we know it’s the right one for our family.
This isn’t goodbye just yet! We still have several events scheduled this summer and plan to keep the truck rolling until it officially sells. And don’t worry…our LOL sauce and seasonings will still be available because we know they’ve become favorites in many of your homes. 😊
