Blue crabs boast a salty-sweet oceanic flavor, while Rockfish has a slightly sweet taste without the saltiness. Light colored and firm with flaking chunks of meat after a pan searing, baking, grilling, or charbroiling, striped bass lends itself to sauces majestically. Without a strong oily taste like salmon, it complements a dish rather than overwhelming the pallet. Rockfish? Striped Bass?
