Old-school French. New-school wink.

A crepinette, properly done. Chef Phil Lind coats lamb loin in chicken mousseline, then wraps the whole thing in caul fat — the lacy membrane bastes the meat as it renders away, leaving a golden crust and the mousseline set around the loin.

Sliced and served over potato fondant with morel jus and a sweet onion sauce riffing on French onion dip.

Thursday nights, elevatedđź’« Date Night at Bar Rouge returns January 15th with three refined courses designed for two.

Begin with Scallop Ceviche among four possible appetizers, then choose from such dishes as Black Truffle Pappardelle, Braised Short Ribs, or Salmon with Pomegranate Beurre Blanc. Finish with Linzertorte or Gâteau au Chocolat.

Half bottle of wine included. $170 per couple.

Thursdays through March 27th (excluding February 12th). Reservations recommended.
