A little BBQ history for your feed. 🔥
Long before “barbecue” meant brisket, ribs, or a backyard cookout, the word traced back to barbacoa, a term the Spanish used for a cooking method they encountered among the Indigenous Taíno people of the Caribbean. The technique involved cooking food over a raised wooden framework above a fire, often using indirect heat and smoke. The smoke both helped to preserve and add flavor to the meat.
As Europeans carried the technique and the word into North America, barbecue continued to evolve, eventually developing into the many regional traditions we know today.
Different meats, different woods, different sauces, but the idea of gathering around smoke and fire has been around for a very long time. We’re pretty happy to keep that tradition going here on the Eastern Shore. 💚
