Have you tried LRB’s smoked trout sandwich? Here is a behind the scenes of our process including Gertrude the smoker we love.
•We clean and brine the NC trout for 24 hours
•Pull the fillets onto racks and pat dry
• Goes back in the walk-in 12-24 hours to form a pellicle(this helps with smoke absorption)
•Pull trout and transfer to smoking rack
• Load wood chips and get Gertrude smoking
•21 minutes later trout is smoked to perfection
•Come try it in our smoked trout salad sandwich!!!
